So I looked around and I know nothing about Turbos. No idea which type, brand or where to get one.
Of coarse now I have a few questions...but first this is what I want the car to do...
Its not a daily driver, I want to be able to drive it downtown smoke afew guys at redlights, maybe drive to the city (250km away) to do the same, take to the track and run 11s
keep in mind that then the turbo goes on I will have completely done the internals/head/injectors/transmission and I am looking for around 600rwhp
So what should I go with:
a) Twin turbo set up vs. One big Turbo
b) Ajustable on the fly

Twin turbos just add to the cost and complexity, there is no need for twins. My car makes full boost by 2900. Adjustable Manual and Electronic boost controllers have there place but on a stock block they make it too easy to turn the boost up to a point at which your motor may blow. Stick with just a wastegate spring that keeps you between 8 and 11 psi and you will be fine. The numbers in my sig were with a heat soaked car on a hot and humid day that was otherwise stock down to the mufflers at 9 psi.
I am very happy with my PowerHouse turbo.

Off the line, you'll be annihilated by the first guy running a Kenne Bell or Whipple.

You make it evident you've never ridden in or even seen an S197 with a turbo.
