That's actually an interesting idea. A bench seat was optional in the original 65-68 Mustangs. They are kind of rare now. I would think a good custom upholstery shop could come up with something. Maybe modify an existing seat from another vehicle or make up a jump seat to fit between the buckets. It would not be inexpensive!

I was thinking the same thing... once upon a time Mustangs had a bench seat option.

I can't imagine a way it could come out looking good in our cars, though.
