I'll probably do all at once. As much as I want to know what it is, I don't want to do just one, and find out that the other stuff needed replacing too and have to either drop the pan or timing cover again and drain the oil.

It shouldn't take much more than a few hours work but damn.
What I'm gonna do is do all the timing and Phaser work and get it back together. Fire it up. If the noise is gone, I'll run it through the RPM range (only up to 5k) and listen. If its there, I'll drain the oil, drop the pan and replace the windage, as it's somewhat non-invasive. I'm just having a hard time believing its the windage, as three of us had our ears and a stethoscope up against the oil pan while it was running, and didn't hear any clang down there.
My uncle races cars back in the mid-west and owns his own shop (http://www.santafegarage.com/src/index.aspx) and when I mentioned the windage tray to him he said (well you think that would have been something they would mention, if only so you could buy it from them rather than get it together and see it doesn't clear).
