I assume your car has the tr3650 (is that right for the '10 GTs?).
If so, common to Ford manuals, the friction point tends to sit at half clutch pedal depression. But I could be wrong about the 3650 clutch friction point setting.

I so hated stopping on hills at first. Especially the steep ones with stop lights at the top. I'd have to turn off the radio to concentrate on my acceleration from a steep stop. Especially when someone behind you stops practically on your bumper. I got it down now but still hate stopping on an incline.

When I bought my 08 GT I had never driven a stick, I drove it off the showroom and then stalled it out down the road, over the course of the next 3 months I must have stalled out that car about 50 times but never once after that.

It's basically practice.
It will make you being in tune with the engine...
Like when maneuvering and practice you first gear take offs until it becomes second nature, kill the radio's volume so you know where you're at as far as feeling the car's response.
Stuff like that, don't be distracted for a while.

When stopped at a light or for any amount of time longer than waiting for my turn at a stop sign, I always put the tranny in neutral and release the clutch. Saves wear & tear on the throwout bearing (a.k.a. CSC) and on your foot.

The best advice you have been given here is practice, practice and practice some more.
Nobody, but nobody learns a manual without stalling, fearing hills and grinding the gears a little smoother.
But don't worry, there is little you can do to hurt your car, it is most likely your ego will be hurt more!
Have fun and keep driving.
