My previous car 2006 v6 stang did exactly this. had a bad cooling fan resistor and the fan wasn't coming on.

old one was a ceramic piece. ford redesigned them to be a bi-metallic strip that's a lot tougher.

I had the same problem - turned out to be a combination of the fan sensor needing to be replaced as well as the reservoir tank cap needing to be replaced as well. No problems since then.
