Now I just need to find out what kind of aftermarket cams my stang has? It doesn't sound so much like the Ford Racing hot rod cams. Comp? Is there anyway of telling?

I'd try to track down the previous owner and talk to him. He should have a tuner that is programmed to that car.

Short of previous owner. Either someone with a really good ear for cams. Take valve covers off and look for numbers

I hope it's as easy as it sounds. The cam covers are fairly easy to access, just undo the bolts and remove?

based on the first post my initial thought would be 4.10's.
3.55's don't create that much difficulty when trying to drive slowly and while I seem to remember several guys getting 3.73's I heard a lot more about going with 4.10's.
The drive by wire can make it difficult on the early S197 when trying to give the throttle just a touch.
