I have the same car as you with 18x10's all around and increased front camber and it still understeers A LOT. So I wouldn't worry about upsetting the balance too much, it's not going to happen unless you start playing around with funky springrates or swaybars.

So Norm, what width would you recommend up front, 8.5 or 9.5? And why?

9.5". 8.5" will not properly support a tire any wider than 255, and it's not all that great for that width. For their part, Ford used 18 x 9.5 wheels for the 2008-era GT500, and held the tire size on the 8.5" wheels down to 235/50.

For really good all-around behavior in a single set of tires, ranging from daily driving rain or shine up to and including entry-level road course track driving, either 255/45-18's on 18 x 9.5 wheels or 255/40-19's on 19 x 9.5 wheels are still strong choices. Appearance-wise, the extra inch of wheel width a 9.5 wheel has over the 255's measuring width wheel brings the 255 out very close to 265-wide, meaning that a 275-wide tire doesn't have all that much of a visible width advantage.

So I would be best off to run a 10 in the rear with 285/35-19 and a 9.5 in the front with 255/40-19?

I think something like that'll turn in to and corner a little nicer than most staggered setups.
