Before anything else, I'd reclean the TB and I'd disconnect the battery for 30 minutes to reset the Adaptive Learning on the PCM. This often helps restore from a lot of granny/city driving settings. Also, after a reset, you may notice some rough engine operation the first few dozen miles.

I haven't had much time to check the spark plugs or the COP's. I will get to them by the the end of this weekend (I need a to get me a torque wrench!). I did check the fuel injectors to make sure they're all firing, which they are. I've also checked for vacuum leaks and have not found any so far.

I just bought a can of Seafoam, but I'm not sure how I feel about feeding it through the vacuum lines, so I'm going to pour it in the gas tank instead.

I will post an update once I pour Seafoam and check spark plugs/COP's

Regarding the SeaFoam, you'll need to ensure the ratio is appropriate and then run that mix until you're down to about 1/4 tank to get the most benefit. sometimes it takes a 2nd attempt if it's a stubborn, fuel system-related problem.
