Depending on the brand of strut assemblies you picked up they may or may not be the identical spec to what you pulled out of the car or they got overly aggressive on the rubber isolators the spring sits on.
Do you have your old springs and rubber isolators?
If after a month or so, the front doesn't settle down like you feel it should, i'd swap the springs and isolators out between the old struts and the new ones.
If swapping the springs/isolators is not an option because you already trashed them, you can simply remove the rubber spring isolators at bottom of the spring mounts on the strut assemblies you bought. That should 'drop' the front end the rest of the way.
A lot of times aftermarket mfg's get overly aggressive on the isolators (thickness) as a way to make the car feel more comfortable and 'floaty', they often forget the type of car they are making them for and lose sight of the performance aspect.
