I had always thought it is better to paint it with the panels off and then re-assemble (or do you paint it together so that you won't chip the paint putting it back together - I saw them use masking tape to mock stuff up on TV)?

I had mine done by a pro. I ain't worth a chit when it comes to body reparir, and they took the hood, fenders, doors and trunk lid off to paint them, then reassembled. I don't know how you would get under the hood and under the trunk lid without taking them off to repaint them.
