Stock 17s are actually 17x7 with a 40mm offset.

IMO, the low profile (I consider anything below a 60 series "low profile") tires just begin to look bad with white lettering. However, the white lettering pens seem to hold up fairly well but take some patience to do nicely.

That must depend upon the year. The 2005-09 the stock 17's are 8" wide. Maybe for the 2010+ like you have hogasswild that is different.
