you can probably get a mach 1 for the value of your 05. from what I've seen used prices on the 05/06's are retardedly high compared to the new car prices.

Your insurance will prolly stay the same since the GT is a 00' and your current stang is a 05' v6... The year to power ratio will most likely break you even with insurance. And unless you tune it i have "heard" that you dont need premium on a 99-04 GT.

Personally, I like the way the new ones look. But, I am a performance nut so......Id probably go with the GT. Actually if I were you Id sell the 05 and try to find a '69 or a '70. Look simialr to your 05 but are WAY faster. Not to mention way more unique.
