BEST way to do LT's is to have an aftermarket K already on the vehicle or plan on installing one during the header install. you'll understand why i say this.

The motor can easily be supported by the oil pan just make sure you put a 2x8 between the flat part of the pan and your jack, and center the jack on the flat part of the pan. People do it all the time without a problem. It's not like we're working with a big block here.

You can also support the engine from above. For me it seemed like more of a pain to get it setup though. I would have had to take things off the motor because the intake bolts did not look sturdy enough to hold the weight of the motor, in my opinion. So I decided to go the oil pan route instead.

As far as parts go, I would recommend MAC headers (notice I have BBK LTs)

The first guy said he did that too, i'd never even try holding weight on my oilpan.

I think pulling the motor 5 inches or so is easier.
It's perfectly safe to do this as long as there's a block of wood. Just don't use only the jack and you'll be fine.

When I drop the K member on jackstands and I'm not at work, I just use an engine hoist to hold the engine. I find it the easiest, and it doesn't get it the way.

I am looking to install LT headers, this is thinking a little out of the box, but I am looking to replace my heads.........can you install the header to the head then put the head on the block? Not sure if anyone has tried this but thought I would ask.
