Good lookin car my man! If you cut the rear cats out, it'll definatley open up the sound a bit more, and with the flows, an uncatted H pipe is a nice sound, so a "half catted H" will sound pretty good, and not be so loud .

I'll probably eventually get them cut out, but I'm gonna get use to the current sound. It's such a huge step up from my v6 setup. I thought that sounded pretty good with o/r hpipe, then dual flows.

Just remember going no cats is illegal in most states if not all and they just overlook it. and if you get by with it in your state, if you travel with the car, you can get an exhaust ticket for emissions. Also if you move, you car will not pass a vehicle inspection. just to keep in mind.
