If your gonna go with headers then go with long tubes, you will see a better gain in horsepower. Sound wise it will be a little louder but not really worth the $$$. I think if you get an O/R X you will be more than happy.

you've convinced me on the xpipes no cats. only because I have deltaflows 40s which are a bit more quieter than your 40s series non-deltas. any recommendation as to Midas vs. Meineke, and how much should I expect these guys to charge me. Does it take a whole day for them to install or is it a few hours only? Thanks for your help!
Well those guys might not do it because it is illegal to remove cats. Either you can do it yourself, which isnt really that hard, or take it to a performance shop. If you do it yourself it's probably gonna take you a couple hours as long as you dont snap the bolts trying to get them off. You will need about a 2 foot extension, a swivel, 15mm socket (I think) some PB blaster (to help eat the rust off), a wrench to take out your o2 sensors, some patience and a 12 pack lol. Air tools will help out alot.
If you take it to a shop they should have it done in about an hour/hour and a half. As far as the cost goes, I really dont know man it just depends on the shop.
One more thing to consider is the fact that with an O/R midpipe (and sometimes a catted midpipe) your car is gonna throw the service engine soon light, due to the rear o2 sensors reading that there arent any cats anymore and that the exhaust is now "dirty". Either you can buy a handheld tuner (Diablo, SCT, Sniper) to simply shut off the rear o2's or you can try to find some MIL eliminators on ebay. Stores dont sell these anymore because the EPA cracked down on them being used to fool the emissions places. You can also make your own for about $5 worth of radio shack supplies, soldering gun and some heat shrink. I can give you a link to those directions if you want.

I've got a UPR off road X and I couldnt be happier. It came with the drivers side flange which keeps the drivers side from leaking, and it had great fit. Your also gonna need the passenger side gasket which can be picked up at NAPA or the auto store of your choice.
I just had a long chat with the local Midas, Meineke folks. Both suggested that I stick to Xpipes with cats, because this will avoid electrical issues and problems with the service light, and also inspections.
Any suggestions on which is a good Xpipe with cats. My 2000 GT is all stock except for delta flow 40s flowmasters. Could someone please advise. Thanks.
