so far as the OP's original question, IMO there is no doubt that a full bolton 2v > full bolton 5.0. You will never see 260~ WHP out of a full bolton 5.0 with all the internals stock.

BTW, I've built a 355rwhp N/A 2V and a 400+rwhp N/A 2V, so I understand more than most what it requires.

My goals of 360rwhp on pump gas is something I feel can be obtained.

so you did a 6000+ dollar big bore kit and another 6-10K in other engine mods eh?
No way any n/a 2v gets close to 400 WHP on stock displacement.
