Default Engine missing after running at highway speed

I have a 1996 GT with 202K on it. Oil changed every 2500-3K, and plugs look good, may seem to be a little lean (very light brown on plugs), new fuel filter 2 months ago. The car is never run hard, just a little more than speed limit on the highway.
I was traveling at a constant 75mph for 1 hour. When I pulled off the interstate and stopped at a light, the engine was missing a little. After I got to my destination and the car sat for 3 hours, started up and it ran fine. I'm a little puzzeled. It never ran hot and the oil pressure was normal. I'm thinking a coil or plug wires going bad when hot.
Any thoughts?
Thanks in advance.

Could be a Fuel injector or fuel pump also.

Good point. I did not think about the fuel system.
Any idea how to check them?

fuel pressure gauge will tell you if the injectors are getting enough fuel. i do not know where to hook it up though.
