Wondering if it would quite down my mass amounts of suspension noise on the street driving with all the spherical stuff, car also is offroad with LM1s

It will definitely help some with noise reduction. I'm very happy with the results personally. Makes the car in general sound more solid. I drive brand new cars daily so the misc rattles and road noise get annoying for me even though its essentially a racecar now.

I want to dynamat my car but dont wanna pull the dash out so I may do the carpet.

What seats are those? I can see corbeaus but what kind?

Corbeau CR1's with the black microsuede. You can dynamat the car without pulling the dash.

LOL I was debating between the A4s or the CR1's and ultimately decided to go with the CR1's because they were slightly wider. I only weigh 160lb but I was more worried about friends fitting in the passenger side and I didn't want to buy a wide version.
