Then why do I see some of the aftermarket starters with a solenoid on the actual starter?

Also if the solenoid is bad then I should be able to touch the two terminals together to make contact with the starter and it should crank right?

Yes, you can certainly do it. Just be absolutely certain you use a screwdriver that has a PLASTIC handle and that you are not touching the body of the car when you do it. The current will take the path of a least resistance. They sell 'auto-starters' at auto parts stores for about $10-15 bucks. Consists of two wires (with jumper like jaws) and a switch that looks like a joystick handle with a button. Would be safer. But the screw driver trick will work just fine.
