Default Loss of Power engine hesitates

I've recently had problems with my 95 5.0 Suggestions that I was given before was to check the catalytic converters to see if they were clogged. Basically the get up and go has got up and went. I would step on the gas and the car would either bog down or hesitate. So what I did was give the car a major exhaust upgrade. I've installed BBK 1 5/8 equal length headers, BBK 2.5" h-pipe with cats, and 2chamber 2 1/2" flowmasters. I thought that would help with the loss of power and hesitation but it didn't. True... I'll try replacing them and see what happens. What's weird is that sometimes when it hesitates and I have the thing floored, the rpm's stay at one spot (say 3k RPM) and it just bogs. So I let off the gas and take off again.

Another weird thing...I had a h-pipe w/out the cats before and the check engine light would come on probably because of the O2 sensors. Well I've replaced the H-pipe and now have cats again and new O2 sensors but the Check Engine light still flashes on and off. Weird.
