a demon carb will help ya pick up a few .10's
yeah that 750 was a might big for the 360....so what size holley you have now? a 600 vac sec..would seem to fit well for you ap. with some power valve changes as well as jets and sec. springs or a 650 spead bore.... on my bbc I use a 650 dp..yes only a 650dp..at the track I use a 830 about a .5 sec difference

You measure my truck's 1/4 times in whole seconds, not tenths. 
Everything I read said that the 750 was too big, but the mechanic insisted that he's had nothing but bad luck with the smaller Edelbrock carb and that the 750 would work just fine. I asked him several times on that to make sure.
