You already have EFI, I'd stay with it.

You may or may not have tuning issues with a MAF and a big cam. It depends on the cam...

carbs are sensitive to cams. Have you driven a car with a big cam? You don't coast to lights like normal any longer, it'll buck, jerk, and look like you have a big pile of crap, and run like one too unless you have supporting mods. Whay does everyone have a hard on for big cams lately anyway?
