Default running cold

i put alot of miles on my stang and the past two longer trips ive noticed that she doesnt seem to heat up as much as she used to, seems to be siting and the line below the normal, y would it be running so cool, i have a mechanical fan and for the most part stock engine,
could it be the thermostats stuck open?
