What temp is the t-stat? Have you check the fan clutch? If it turn easily after you have driven it, time to replace. Mine runs at a constant 180. That may bebit high, are you sure your gauge is accurate?

I wouldnt get any colder. I dont know the science behind it, but your car will run better with a higher temp t-stat. Someone else may be able to explain open and closed loops and how that works, I dont remember. I would make sure the radiator is clean, even though you just flushed it. Get a flash light and look in there, if you see build up, it will not cool as it should. Since you just replaced the fan clutch, there isnt much left except the t-stat, or water pump......how is that? No leaks or noises. Can you see the water circulating when the engine is running? Also make sure you get all the air out of the system, you have to burp the upper rad hose and keep adding water. Does it boil over and fill the bottle or just run warmer than usual?

1st off replace the stat with a 180* or 190*

2nd the gauge is suppose to be right in the middle

+1 the 160 will actually not allow the car to get hot enough and the computer will not be able to get out of its closed loop warm up condition until it reaches aroung 175 degrees.

might have air pockets in it if you just drained the radiator.. these can be a pain to get out.. Sometimes need a pressureized machine that shops use for this.. Ive seen many of problems with flushing radiators like this at work.

I would just take the cap off and run the motor for 30 to 45 minutes and make sure the tstat is open and that should get the air out the system if there is any.
