I don't drive it a lot but it was around 160 now I bet it's around 280.

The first mistake here, is relying on your dashboard reading, when in fact you could have a bad Temperature Control Sending Unit.

If you have heat, leave the thermostat alone, as you are about the open a can of worms.
Not true. The t-stat could be stuck partially open, making it take longer to, go into closed loop, reach operating temp especially in cold weather. The t-stat is the first thing I would try. Taking longer to go into closed loop could certainly cause a dip in mileage.

280 is WAY to hot!...the tstat is probably not opening and is stuck shut. Take it out, and put a new one in immediately. Whenever you buy a tstat, put it in boiling water to make sure it opens.

Dont listen to what other people say, trust me when i tell you it WILL open, spring loaded or not, it will open. Tstats are based on tempature of coolant, not pressure all pressure.
