on the 87 mustang, the brakes arent always as stiff as i would like, and sometimes there perfect, bled them today figuring that was the problem but its still the same,

sometimes it catches imediatley, sometimes it has some give, stops fine, just for peace of mind, anyclues whats causing this

Well the foxes are not known for having great brakes. If you properly bled the brakes it might just be that the fox brakes suck. Do you have any leaks anywhere? The drums could be out of adjustment, you could have some contaninent like oil on the pads.
