On the fan clutch, you want to ensure it does not free spin when you attempt to spin it (it should stop as soon as you let go) and it has some resistance when you turn it.

Try filling up the radiator 1/2 way. Start it. let it warm up to about the 2nd line on the stock gauge. This is around 180 (on my 88 it is) watch the coolant level, it should rise and maybe even spill over until the thermostat opens, then the level will drop quickly. Leave it running and add more coolant until it is about 2" down in the radiator. watch the temp gauge, it shouldn't rise above the 3rd line before the thermostat opens again. Do you see the coolant flow in the radiator? If not, redo the thermostat.
