Go get a mini torque starter. That may help a little if your starter is struggling. But like Mjr has said one ford starter will work with the 157 and 164 tooth flywheels. I have used mine on both. I would go bad to a stock bellhousing and see if your problem still exists.
And who said that the 351 flywheel is an 11 inch?[>:] Yes the block is wider but the bellhousing bolts are the same so the flywheels should be the same. I have never seen/heard of the 11 inch on a 351. To me that sounds like the problem. Trying to get your starter to engage on that flywheel could be causing the strain.
