First off, next time it doesn start, check to see if you have spark or fuel.
This issue can be several things from leaking injectors (leakdown test to check), defective ECT (these can be ohmed out while veichle is running), defective ICM (parts stores can test these) or a bad PIP and so forth.

Just to agree with dreamer1uk, I knee-jerk changed half a dozen parts to fix similar "won't start when hot" issue without proper diagnosis of ignition vs fuel. I finally installed a fuel pressure gauge, and the next time it wouldn't start, there was "0" fuel pressure! Was able to confirm voltage to fuel pump "good", so replaced fuel pump, and my '89 has been running without a hiccup ever since. Lesson here is to identify root cause before heading down rabbit trails. Fuel pressure gauge was around $50 and easy to install.
