Default Problems with the engine?

I have two issues that I'm concerned about regarding the stang....

I have a bad oil leak(the drain plug bolt and surrounding metal is fubar... so I have to replace the oil pan... but...

Why is it that the oil in the engine gets soooo dirty. I had to limp the car home with the bad oil leak... constantly stopping to throw in another quart. Despite this constant changing of the oil (leaking and filling)... the oil in there gets filthy black within a hundred miles or so.

The engine only has 3000 total miles on it. The car is going to be parked for a long time until I get a chance to change the oil pan... I don't want to pull the engine so I'll probably just throw on a tubular K-member and then do the pan.

Issue #2... I was caught in a very heavy downpour and all of a sudden when cruising at 70 mph and even in lower gears (just cruising and not on the throttle much), the engine cuts out for about half a second every other second in bursts of about three... Then behavior is normal for a few minutes and then the engine cuts out for a few half seconds again. **Note the issue seemed to go away a bit when I opened the throttle**

This started during heavy rains and when I left the hotel in the morning, despite not raining, it did it again. However, this time it initially did and then the following thousand miles went without issue...

When the engine cut out the car wanted to decelerate much more than when you let off the throttle... could this be preignition? I'm confused.

Could this be from the water?

On another note... the backside and underbody of my car are covered in an oily film from the wind causing the oil to leak onto the longtubes and burn off. That will be fun to clean.
