Exclamation 95 5.0 GT - Couple of issues

Ok so the patient: 1995 Mustang GT 5.0 5speed. Known engine mods: mild Cam, BBK shorties, MSD wires
i just got this car, and i've been chasing issues....
Issue #1: Overheating.
I found the fan wasn't coming on, so i wired in a hot switch to try and narrow the problem. I read somewhere that the fan is a "Dual speed", high and low. Not sure which wires are for which speed and i can't find a good diagram for anything electrical on this thing to save my life. So.... I wired battery power to the ORANGE wire, and black has a good ground. I did not touch the BLUE wire. Fan comes on, but temp still climbs sky high in city driving, or on side roads at 45mph.

Issue #2: Hard starting.
When i hit the key, the starter rotates very slowly at first, barely cranking the engine. after a couple seconds it will rotate faster and start right up. Is a little harder when the car is warm.

Any ideas??? I'm VERY new to the mustang tech stuff. Any help will be greatly appreciated!!!

battery measures 11.57-12.60 Volts constantly
Coolant is full, both upper and lower hoses are hot so that tells me coolant is flowing through the engine
