Default Starting to upgrade.

Was considering throwing 3.73:1 gears in my rear end, as well as a shift kit. I'm currently using the 1-2-1-D technique to manually shift it, which I find fun, honestly.
I did want to install a better torque converter as well. Oh, and a quick q, what does rejetting a carburater do? (600CFM Edelbrock w/ Electric Choke. #1406)

Thanks guys
