I think that for either strip or street a 351(W) would be the way to go if you are starting with nothing but a choice of which one.
Problem with a stroker 351W out to around 390-427CID is that you will need some real good heads to get the whole thing to work.
My dream after I get my lottery ticket is do a Dart block, 4.25 bore and a 3.75 stroke and make something like a 398, from what I've seen in 30+ years of real life drag racing, that combo with a 6" rod should work great........

With a 351 based stroker you are starting out with more cubes than you can end up with using a 5.0 engine. The 351 blocks can handle much more power. I went through the same decision 3 years ago, and am very happy with the 393 for a street/strip car. I am making well over 500 HP NA, and will be adding a Procharger this year. It makes a FUN car. I went with a carb to keep cost down, and make it easier. If It was a daily driver, I would of used efi to get better in town milage, but as a weekend play car, this is great.
I will be dumping the P/S, and mounting the Procharger in its place.
With a Mustang, any needed parts are available.
