I run a 195 in mine, and it routinely gets over 100 in Bakersfield during the summer. No overheating. The hotter the engine is, the better fuel vaporizes and the more rapidly/completely combustion occurs. I wouldn't run a colder stat unless it helps control detonation on a more agressive tune. If it overheats and the stat is working, the problem is something else.

RE: 160* OR 180* Thermostat
well i have 180* thermostat aluminum heads, big 2 row alum rad. upgraded water pump and my car will not go ver 170* so i think i need to switch it over to a 195 so i can get it to run better yeah mine runs way rough and cannot get it over 170 so i will be switching over to a 195 and see what that does.
plus up here in washington the summers are shorter than winter time so not very hot probably only see 90* degrees or hotter maybe 5 -10 times a year

RE: 160* OR 180* Thermostat
Even with my 195, in the winter here(routinely under freezing) and a 3 row copper/brass radiator, I doubt the engine ever gets much over 180-185. It never fully warms up until summer time.
