Default Which is easier/funner to work on? mid-80's and earlier or 90s and later?

I'm looking into picking up a car to work on. Something cheap, say around $3000. My only requirements are V8 and manual. Other than that, I don't really care. I'll teach my wife to drive stick with it and then work on it for fun. My question is, should I go for a mid-80's Mustang, or a mid-90's Mustang?

What are the differences? Which is more enjoyable to work on/easy?
