I'm not interested in top-end speed since I'll be crusing around suburbs 90% of the time where the speed limits range between 25 - 50 MPH but, I do, at times, like to accelerate quickly from 25 - 50 MPH. This is sort of an ambigeous question, more subjective than objective but, will my V-6 210 HP Mustang have good accelertion within that speed range? Will it at least slightly pin me back in the seat?

While your car doesn't have a high peak horsepower rating, it has some good low end grunt that would be just fine at those lower speeds. That is where torque comes into play, not so much the peak horsepower rating.
