The 351W/T-5 will be ok for a daily driver with a mildly built Windsor, but I wouldn't be dumping the clutch and ramming thru the gears too often.
you can not use a truck flywheel as they are 11 inch and have 164 teeth the 5.0 HO mustangs use a 157 tooth flywheel. either you have to buy a new 28oz unbalance flywheel or you have to find one out of a pre1981 mustang however they only had 10inch clutches and your 87 had a 10.5 inch clutch. if you look you can find a new flywheel for $100

yeah 351 will have more torque and it will be easier to break the T-5 so be gentle. Good Luck
