My white original center console has yellowed pretty bad. I assume its white plastic because I wasn't aware white paint could yellow like this.

I have heard of this stuff called Retr0bright which you can make yourself and apply to the plastic to bring it back to its original color.

So are these painted or original plastic color? I know most, if not all, replacement consoles come in black.

For armrests, dash pads, door panels and other padded surfaces the correct spray dye for your interior is also available from most Mustang parts vendors online.

So they are painted then?

I believe they are originally just formed in the color they are supposed to be, not painted. However it is not a problem to paint over them with the paints from certain vendors

No. Moulded in color. But as said, they can be painted if you do it right. I painted a black repro white a few years ago, still looks great.
