I was looking at buying a 1969 Mustang Grande. it needs new floor pans and the heater core needs to be replaced. I don't mind replacing the floor pans but I want to know how hard it is going to be to replace the heater core. do I need to remove the entire dashboard or can I get to it from the glove box?

Remember that the ductwork is also 40 years old. The new heater core may work great, but if the ducts leak, warm air kinda diffuses all over, which is especially bad when you need the defroster to really work well.
I'm not saying your ducts are bad, it's just something to check. If it turns out you do take your dash off, it's not that hard. Take the opportunity to oil/clean your clock, gauges, and audio.
