Looking for guidance:

I have a 1970 Fastback with a Mustang II front suspension with one inch dropped spindles and a rebuilt nine inch rear end with an RRS three link suspension.

I would like to put 18x8 wheels on the front and 18x10 wheels on the rear. (I chose 18 inch wheels based on feedback from this forum - 18's apparently have greater tire selection.) Not to mention I do not want to go any bigger than 18 inch wheels anyway.

My question is with regard to backspacing and tire size (I am not even sure what tire brand to go with). I would like for the wheels and tires to tuck neatly into the wheel-wells and I would like for the Fastback to show a subtle rake.

What backspacing should I target?

What tire size and brand should I target?

Since you have changed to a mustang 2 kit and the 3 link its best you buy a wheelrite jegs and summit both carry it.It will let you test out your wheel size back spacing everything.

Damn good answer andrewmp6. Should be a worthy investment given how far off stock the OP is.

The wheelrite is 70 bucks its better to have it then order custom wheels wrong that can get pricey.
