Ash,

A little more info. Is it currently a 2bbl carb? Does it have any other performance parts? What kind of driving? What is more important to you: ease of installation, smooth operation, high performance?

I have put on edelbrock 550's and 600's on 289's with very good results. They are simple and pretty much are good to go right out of the box. Paired with a performer intake and some headers and you have a nice little street motor.

Ash,
GT basically answered your question. Without knowing what intake you have it's a guess. However IF you want easy, reliable and you have a 2 barrel intake....you can upgrade to a 2350 Autolite/Holly. It carries nearly 500cfm and will give you great performance and better gas milage. I also recommend All American Carbs out of Jax Florida.
They are great guys and do fantastic work and willing to listen to dumb questions unlike Pony Carbs

i should add that it has a pentonix 2 ignitor instead of the points sytem ignition, bigger distributor cap, new 45000 volt coil, 8mm wiring but no other real upgrades, old exhaust manifold and someone before me either did work on the motor or they just put on a dress up kit

If it were my car, I would go with the performer intake, edelbrock 600 and call it a day.

I'd recommend the Weiand 8120 intake instead. Newer design with a broader torque curve.

The Edelbrock 600 is a bit big for a stock 289, but it will allow room for growth down the road. I'd strongly recommend picking up the matching tune kit, and maybe a couple extra rods, for the carb. There is no such thing as an out-of-the-box carb; every carb (aside from the factory Autolite 4100) will need a little tweaking to get it running properly.

If ease of installation and money are factors, you may find a 2barrel to 4v adapter plate to bolt on your existing intake manifold. They normally take up some room so watch hood clearance and they are not the most effective design. I would find a good manifold and carb setup like mentioned before. I use the Professional Products Typhoon manifold and the Edelbrock 1406 carb (600 CFM) but I have a lot more engine mods than you.
If money is not a big deal, you could always upgrade to an aftermarket EFI system. I hear the newer systems are very user friendly. No more flooding, re-jetting, adjusting the choke.....etc.
