Default 289 Rebuild Ideas

I am new to this site (this is my first post) so please bear with me. I am restoring a '65 Coupe. The engine was very tired. I have the block at the machine shop for cleaning and boring. Since the work is going to take awhile (they are pretty backed up) I would like some thoughts on my plans going forward. It will be a weekend driver and I have installed power steering and power drums. I plan on building the engine which is in front of a rebuilt C4:

Boring to 302 size
Install a 331 stroker kit
Aluminum heads with 1.90 intakes and 60cc chambers
Roller cam 465/480 with 112 seperation
Aluminum Perfromer intake with a 650 cfm Quick Fuel Carb
Reuse exhaust manifold with dual exhaust

My goal is 300 HP since I want to do a burnout every now and then. I am using the stock rear end and when it breaks I will fix it then. I have been advised to stay away from headers since I will have to massage the inner fenders.

I was a gear head back in the early '70s but have not had my hands on a car to do anything other than a couple of brake jobs, alternator changeout and oil changes since.

The question is am I out to lunch here or on the right path.

Any advice is helpful.
