I'm thinking about doing the same on my 65 and replacing the idiot lights with gauges. Do I need to change the wiring harness feed and/or the engine sensors for water temp/oil press? I'm guessing if I want a tach, that is a harness change or extra feed off of the engine?

You'll need the senders that are for the gauges you put in. The wire itself won't matter.
For the tach, you'll probably have to run your own wire from the coil (unless you're running an ignition box, then from that tach output).
