RE: bench seats
I'm by far no authority but I do believe the only reason benches are so rare is cause not many people wanted they (to familyish or something) But hey if someone is willing to buy one great!

I dono....i think the bench seat and the two speed transmission and the steam engine and early air planes that flap their wings to fly are all sorta in the same club....the "im rare becuase im not that cool and not that functional/good" club....get a big lifted redneck trunk if you want a bench seat....

RE: bench seats
Bench seets are rare. I think I remember that there were something like 600k 67's produced and only 9000 had bench seats.
I have a 67 w/ the bench seat and I think it is cool. Not just for the rarety factor, but for the nice arm rest that gives me something to lean on, and also the ability for my girl to slide right on over when the need arises.
Besides, tho only difference between stock buckets and the bench is the arm rest and the center section. Otherwise they are the same. If you intend on keeping your car original, I would stay with the bench. If resto mod, go nuts.
Ceratinly they were low sellers because the buckets are viewed as sportier, and as mentioned above, benches seen as more of a family sedan type of thing.
Ultimately its your car, do what you like the most.
