Depending on the extent of your restoration expect to spend from 500 to 2000 hours on it. If you are going to put in a rack and pinion, might as well go with a Mustang II IFS. It comes with a rack and pinion plus you get rid of the shock towers! All you need is a compressor and welder to do it.
