Default wiring choices for a 68

Evening everyone. New to this, but looking for info and opinions. Have a 68 GT coupe, 390 4-speed. Completely gutted, and just back from the body shop. I'm starting with the wiring, and wondering if there's an advantage to Painless (or other) over factory. From what I've read the Painless advantages are a heavier gauge wire and modern fusing. Disadvantages are installation requires modification to the firewall, and all the terminals and connections have to be hand wired. On a factory replacement the terminals and connections are already pre-installed, and the whole harness is ready for direct installation. I think the costs are roughly the same.

Do I understand each system correctly? Any comments on the alternatives, plus or minus? Upgrading the wiring just seems to make sense, but if I'm installing all new it seems the factory replacement should perform as well as the original wiring, which got the car through its first 40 years. I don't expect to make a lot of additional electrical mods to the car, just a decent hi-fi.
