For the most part, Ford didnot stamp vins into the engine blocks. There is no true 'numbers matching' for Mustangs. The best you can usuallyget is a block with the propercasting and date codes, and even then sometimes you get glitches where the guy working the forklift decided to pick up the newblocks from the front of the pile instead of the old blocks in the back, or they ran out of certain engine blocks at a particular plant and had to pull from a different pile.

The exceptions are some of the more rare high performance models. If you're lucky, your K code or Boss motor will be stamped with a partial vin (I think Kar Kraft did this more often), but even then I don't believe all of them got that.

on 68's (and up?) I thought the best you'd get was a partial vin - ie; all of the identifying numbers, but not the vehicle series numbers at the end?

my 289 has 8R03C... on it, but ends before completely matching the vin (cant remember if it is only missing the last 3 or 4 numbers). Doesn't appear to have ever been anything after the first part of the vin / doesn't look like anyone scratched or obliterated anything there?

I read somewhere that the early mustnags 64-66 might have been the original engine, but stamped for a falcon or fairlane, since these blocks were lying around already. Its amazing how many people thing they have the original engine but it says it came from a fairlane. I believe they may actually have the original engine.

Yeah, like I said, this was pretty common, especially considering the numbers of Mustangs being built.
