Axle and transmission fluid levels

Axle and transmission fluid levels
We got the rear gears pulled last weekend and up to the shop to put in the new gears. Got the transmission output shaft oil seal changed. Now comes the "how much oil/fluid do I put back in" question. Well, how much do I put back in and how can I tell when the transmission and rear end are full. 4 speed T-10 and an 8" rear end. By the way, pulling the rear gears was a snap. Just pull the 4 bolts holding the axle bering retaineers and pull 'em out. 10 bolts around the "pumpkin" and the rear gear carrier pops out. Not to sure if I need axle flange gaskets or not, the oil seals in the axle housing have been replaced. There weren't any gaskets on the axle flanges when I pulled the axles out, so wondering about the need for new ones on build-up. We are also going to be replacing the leaf spring front bushings before putting it all back together.
