I doubt it will be anything special down the road. There wasn't anything special about them performance-wise like the Mach I's and Cobras so demand is likely never going to be that high.
As far as daily driving a classic, my 67fb is the only car I own It's a constant project, but I like it that way. It's loads of fun and very reliable and I love having it as my daily driver. The only downside is that I need to either finish all projects within a day or two, or find alternate transportation while the car's down. I've managed to make do though

I drive mine to work/school every day and then every where elseI go, as its the only car i have right now. (which means whatever i do to it, i have to be ableto finish in a weekend, or get some one tolend me their car...nothing like a littlepressure to keep things moving!)and as a reliable car, its been better to methen any other ive had.

my 65 was my DD for almost 2 years before i got my 07 shelby GT/SC(Lola), then the shelby was, then i felt bad for neglecting the 65 (hank) so now i drive them both, i sometimes drive hank for a month, sometimes lola, sometimes i take a different one each day, but in the rain i take the 65, the 07 has 430~ rwhp so it doesnt take the rain...sliding isnt too bad in the 65, but you cant see **** in bad weather[8D] ahhhh the joy of the classics. love em to death.

I drive mine in the snow too. Actually, I drove it in the snow yesterday. Just cuza car's old doesn't mean it shouldn't be driven. Putting miles on an old car is the same as putting miles on a new car, any moving parts are going to wear out. Nothing in the chassis is going to wear out from driving, but typical stuff will, engine parts, wheel bearings, tires, brakes etc. All the same stuff as on a new car. So why garage something that was meant to be driven and put the same wear and tear on another vehicle, when you can build an older car to be more reliable and durable? Most factory parts are a compromise of reliability, performance and cost, but primarily cost because they have to be massed produced. Take an old car and put better parts on it and you have something with better than factory reliability, with less things to go wrong.
If you're just going to put a car in your garage and look at it occasionaly and maybe wax it or drive it once in a while, you might as well just put up a poster and look at that. Or if you see it as an investment that you can sell down the road, then just invest in the stock market etc, you'll have better turnaround if you invest wisely and it'll be protected, plus it frees up room in the garage.
