Are either of these Barrett-Jackson quality restorations? If so, you have a place to turn to.
Otherwise, dunno. Which one do YOU LIKE BETTER is probably the question that you should be asking yourself instead.

RE: Which is better 65 or 67 mustang
Having had both I'd say the '67 Coupe is a better choice.
It's a bigger, wider, more comfortable, better looking car (IMHO) with more potential engine/transmission/suspension/rim/tire choices.
Which one is worth more depends on what features the car originally had and how much money you spend restoring and or upgrading the car.
Generally, neither will be as valuable as a fastback of either year.
I must disclose that I currently own a '67 Coupe.

If you're looking for performance then keep in mind there are trade offs. 67-up is large enough to fit a 351 comfortably and big blocks as well, but they use different suspension parts than others, and a few other things, so sometimes getting certain parts can be a bit more difficult. I prefer the 67/68 body style myself, the side design as well as the tail lights.

Maybe this link will help. Values seem to be all over the map at first glance but you might be able to narrow it down some.

Daughter's '66 coupe is resting in my garage. Needs damn near everything at this point.

First off, you'll never get your money back out of it.
With that said, you're more likely to achieve higher value based on the quality of the work.
One other thing to consider is the larger motor bay of the '67, its much much much easier to fit a 351w or a big block in the larger body.

I get the impression that he's looking for something to restore rather than modify. That might make a slight case for the '65. Tough one for me to call- one of my friends had a '67 (fastback) back in the late 60's.
